After spending the day in the kitchen baking, I had 6 varieties of cupcakes:
Key Lime Cupcakes: Graham Cracker Crust, Butter Cake, Key Lime Filling, topped with Sweetened Whipped Cream, a Sprinkle of Graham Cracker, and a Sugar-Dipped Lime Wedge.
After searching online for a recipe that looked good, none seemed to measure up. So I took inspiration from all the different recipes and created these. They turned out much better than I could have hoped. The next time I make these I may swap the keylime curd filling for a keylime pie filling.
Double-Lemon Raspberry Cupcakes: Lightly Lemon Cake, Lemon Curd Filling, topped with Raspberry American Buttercream and a Sugar-Dipped Lemon.
I had planned on using a lemon cake recipe, but instead I just added some lemon juice to some leftover butter cake batter from the Key Lime Cupcakes. This was perfect. There was just the slight lemon flavor to the cake which was a perfect compliment to the lemon curd and the super sweet American buttercream.
Strawberry-Kiwi Cupcakes: Strawberry Cake, Kiwi Curd Filling, topped with Strawberry Italian Buttercream and a Sugar-Dipped Strawberry and Kiwi.

When I began brainstorming ideas for Easter Cupcakes, most of the ideas came pretty quickly, but I kept trying to come up with a cupcake that was unique but not way out there. Everyone has had Strawberry-Kiwi flavored drinks or candy in their life, but a strawberry-kiwi cupcake? That's not something you see everyday.
I made two variations. One with a kiwi cake and one with a strawberry cake. Both cakes I filled with a kiwi curd and topped with the buttery, not overly sweet, Italian buttercream. The kiwi cake was good, especially if you are a big fan of kiwi. The strawberry cake was better. Overall, I was pretty impressed with how these turned out.

This is my go-to chocolate cake. It is the moistest cake I have ever had and gets raves reviews every time I bring it out. Strawberries added the just right sweetness and springiness to the cupcake. The frosting is out of this world. And the easiest frosting ever to make. Cream cheese and whipped cream. Light, not overly sweet. Perfect.

Easter fell during Passover this year and since I never want someone to be unable to eat my cupcakes, I made "Passover Cupcakes." These were alright. The frosting wasn't quite right. And although the cake was good, it was a much different texture than I am used to. Unfortunately I did not get rave reviews from our Jewish guest. He mostly blamed it on the mint frosting.
Overall I was extremely happy with how all the cupcakes came out. I am even more happy with how my Easter weekend turned out with all my family and friends!
